How do I edit the word "Sections" that appears as the heading on the right hand side? I’ve looked through the templates tutorial but it goes way too deep and complicated for what I want to know and I didn’t find it useful at all. Is there an idiot’s guide somewhere that shows only how to adjust the template that is already in place?

Not sure I understand your question, also because you did not mention the version number. Since Spip 1.9, standard templates are in the dist/ directory. In them, every tag with a colum, like <:name:> refer to a word or sentence in the localization files. Theses files are in the ecrire/lang directory.
